Аннотация В статье рассматривается проблема оптимизации жирно-кислотного состава липидов мяса птицы, широко используемого в питании. В составе липидов мяса птицы содержание омега-6 значительно превышает омега-3, что не оптимально для усвоения и нуждается в коррекции. Исследована возможность обогащения мяса индейки льняным маслом, что позволило обеспечить в фаршевых композициях с растительными маслами соотношение омега-6 : омега-3, обеспечивающих их нутриентно-адекватный баланс, не превышающий 10 единиц. Представлены результаты исследования жирнокислотного состава и жирнокислотной сбалансированности липидной части фаршей из мяса, а также их изменения в результате теплового нагрева мясных композиций в водной среде с температурой 95±2 °C до температуры в продукте 70±1 °C. По данным исследований омега-6:омега-3 в фаршевых композициях до тепловой обработки это отношение составило от 6,5 до 7,7 единиц, по сравнению с контролем (42 единицы); после тепловой обработки от 6,5 до 8,0 единиц для композиций фаршей, включающих растительные масла в сочетании с льняным маслом. Данные по жирнокислотному составу композиций согласуются со значениями показателей жирнокислотной сбалансированности, составляющими RL1…3=0,47 – 0,57 и RL1…6 = 0,32 0,37 единиц для обогащенных фаршей до тепловой обработки и 0,48 0,57 и 0,31 – 0,38 единиц после тепловой обработки соответственно, и подтверждают возможность обогащения льняным маслом рецептур фаршей при производстве фрикаделек и могут быть распространены на другие виды продуктов.

INFLUENCE OF THERMAL HEATING ON THE FATTY ACID COMPOSITION OF TURKEY MEAT ENRICHED WITH LINSEED OIL

Abstract The paper examines the problem of optimization of the fatty acid composition of lipids in poultry meat, which is widely used in nutrition. The omega-6 content is significantly higher than the omega-3 content in the composition of poultry meat lipids, which is not optimal for assimilation and needs a correction. The possibility of turkey meat enrichment with linseed oil was investigated with the aim of ensuring the omega-6 to omega-3 ratio in the minced meat formulations, which provides for the nutritionally adequate balance not higher than 10 units. The paper also presents the results of the investigation of the fatty acids composition and fatty acid balance of the lipid fraction of minced meat as well as the changes due to thermal heating of meat formulations in the water medium with a temperature of 95±2 °C to a product core temperature of 70±1 °C. According to the data of the investigations, the omega-6 : omega-3 ratio in the minced meat formulations before thermal treatment was 6.5 to 7.7 units compared to the control (42 units); after thermal treatment, it was 6.5 to 8.0 units for the minced meat formulations, which included vegetable oils with linseed oil. The data on the fatty acid composition of the formulations correspond to the indicators of the fatty acid balance which was RL1…3=0.47 – 0.57 and RL1…6 = 0.32 – 0.37 units for enriched minced meat before thermal treatment and 0.48 – 0.57 and 0.31 – 0.38 units after thermal treatment, respectively. The results confirm the possibility to enrich minced meat formulations with linseed oil when producing meat balls, which can be extended to other types of products.

Введение

Насыщенные жирные кислоты (НЖК), мононенасыщенные (МНЖК) и полиненасыщенные жирные кислоты (ПНЖК) являются основными структурными и функциональными компонентами клеточных мембран. ПНЖК очень важны для оптимального развития и функционирования органа зрения и нервной системы [1].

Особенное внимание в рационе людей следует уделять незаменимым ПНЖК, которые не синтезируются организмом животных и человека и получаются только с пищей. К ним относятся линолевая кислота (омега-6) и альфа-линоленовая кислота (омега-3). Линолевая (ЛК, С 18:2 омега-6) и альфа-линоленовая (АЛК, С 18:3 омега-3) кислоты дают начало большой серии разнообразных эйкозаноидов - гормоноподобных веществ,

Introduction

Saturated fatty acids (SFAs), monounsaturated fatty acids (MUFAs) and polyunsaturated fatty acids (PUFAs) are the main structural and functional components of cellular membranes. PUFAs are very important for the optimal development and function of the organs of vision and the nerve system [1].

Special attention should be paid to the essential polyunsaturated fatty acids (PUFAs), which are not synthesized by an organism of animals and humans, and are supplied by the diet. They include linoleic acid (omega-6) and al-pha-linolenic acid (omega-3). Linoleic acid (LA, C 18:2 omega-6) and alpha-linolenic acid (ALA, C 18:3 omega-3) are the precursors of a wide range of different eicosanoids - hormone-like substances that facilitate preservation and maintenance of the structural and functional integrity

Полиненасыщенные жирные кислоты (ПНЖК) семейств омега-3 и омега-6 являются необходимыми компонентами пищи для всех позвоночных организмов. Их наличие и, главным образом, соотношение, определяют состояние липидного обмена, степень предрасположенности к сердечно-сосудистым заболеваниям, нарушениям нервной и зрительной функций, аллергическим заболеваниям, развитию воспалительных процессов [2, 4, 5, 6, 7]. На генном уровне ПНЖК семейства омега-3 и омега-6 контролируют генную экспрессию в различных органах [8, 9] и тканях [10, 11, 12]. Большая часть этих омега-6 и омега-3 кислот, поступивших с пищей (50-70%), расходуется на энергетические нужды человека 13, 14]. Лишь небольшая часть поступающих с пищей незаменимых ПНЖК превращается в докозагексаеновую и эйкозагексаеновую кислоты [1, 15], являющиеся основными кислотами в клеточных мембранах сетчатки глаза и предшественниками локальных гормонов клеточной регуляции, оказывающих влияние на процессы воспаления, регуляцию кровотока, донашивание беременности и т.д. [16].

В соответствии с методическими рекомендациями МР 2.3.1.2432-08 норма потребления омега-6 жирных кислот должна составлять 5-8% от калорийности суточного рациона, омега-3 - 1-2%, т.е. рекомендуемое соотношение омега-6 : омега-3 должно быть 5:1, а у людей, страдающих сердечно - сосудистыми заболеваниями, оптимальное соотношение омега-6 : омега-3 2:1 - 3:1 [15].

Рекомендуемое суточное потребление ПНЖК для снижения риска развития сердечно-сосудистых заболеваний должно составлять 500-1000 мг [17, 18, 19, 20].

В рационе современного человека широко используется мясо птицы. Жирнокислотный состав липидов мяса цыплят и индейки представлен в табл. 1. Липиды мяса птицы богаты ПНЖК, однако они содержат преимущественно омега-6 жирные кислоты, отношение омега-6 : омега-3 велико (12 единиц - для липидов мяса цыплят и 25 - для липидов мяса индейки), по сравнению с рекомендуемым (не более 10).

Кроме того, при промышленном производстве полуфабрикатов, колбасно-кулинарных изделий и консервов в их рецептурах часто используются дополнительно сливочное и растительные масла, которые богаты омега-6 жирными кислотами. В результате поступление омега-6 значительно превышает омега-3, и не соблюдаются их рекомендуемые соотношения.

В связи с этим становится очевидным целесообразность обогащения продуктов источниками омега-3 жирных кислот.

Цель работы: Изучить влияние тепловой обработки (бланширования) на изменение жирнокислотно-го состава липидной части фаршей из мяса индейки, включающих растительные масла и обогащенных льняным маслом.

Объекты и методы исследования

Объектами исследования служили модельные композиции фаршей из мяса индейки с включением растительных масел (подсолнечного или кукурузного,

of cells and cellular components [2, 3]. Polyunsaturated fatty acids (PUFAs) of the omega-3 and omega-6 families are the necessary components of food for all vertebrates. Their presence and, mainly, the ratio, determine the lipid metabolism status, the degree of predisposition to cardiovascular disease, disorders of the visual and nervous function, allergic diseases, development of inflammatory processes [2, 4, 5, 6, 7]. At the genetic level, polyunsaturated fatty acids (PUFAs) of the omega-3 and omega-6 families control gene expression in different organs [8, 9] and tissues [10, 11, 12]. The majority of these omega-6 and ome-ga-3 fatty acids supplied by the diet (50-70%) are spent on the energy needs of humans [13, 14]. Only a small part of polyunsaturated fatty acids (PUFAs) supplied by the diet is transformed into docosahexaenoic acid and eicosahexae-noic acid [1, 15], which are the main acids in the cellular membranes of the retina of the eye and the precursors of the local hormones of the cellular regulation that influence the processes of inflammation, regulation of the blood circulation, full-term pregnancy, etc. [16].

According to the methodical recommendations MR 2.3.1.2432-08, the norm of consumption for omega-6 fatty acids should be 5-8% of the caloricity of a daily diet, for omega-3 1-2%; that is, the recommended omega-6 : ome-ga-3 ratio should be 5:1, and for people suffered from cardiovascular disease, the optimal omega-6 : omega-3 ratio is to be 2:1 - 3:1 [15].

The recommended daily intake of PUFAs for reducing the risk of development of cardiovascular disease should be 500-1000 mg [17, 18, 19, 20].

Poultry meat is widely used in the diet of modern humans. The fatty acid composition of lipids in turkey meat is presented in Table 1.

Lipids of poultry meat are rich in PUFAs; however, they contain mainly omega-6 fatty acids. The omega-6 : omega-3 ratio is high (12 units for lipids in chicken and 25 for lipids in turkey) compared to the recommended ratio (not more than 10). Moreover, vegetable oils and butter, which are rich in omega-6 fatty acids, are used additionally in the industrial production of semi-prepared products, sausages, culinary products and canned food. As a result, the intake of omega-6 is significantly higher than that of omega-3, and the recommended ratios are not adhered to.

In this connection, the expediency of product enrichment with the sources of omega-3 fatty acids becomes obvious.

The aim of the work: To study the influence of thermal treatment (blanching) on changes in the fatty acid composition of the lipid fraction of minced turkey meat with inclusion of vegetable oils and enriched with linseed oil.

Materials and methods:

The subjects of the research were the model formulations of minced turkey meat with inclusion of vegetable oils (sunflower, corn, olive or soya) or butter and enriched with linseed oil ensuring the omega-3 : omega-6 ratio of 7.1±0.6 units.

Minced meat formulations included the basic (control) ratio of the components (81.6% of turkey meat; 3.0% of starch; 0.2% of table salt; water) and differed in the content of vegetable oils and butter: sunflower and linseed (for-

Композиции фаршей включали базовое соотношение компонентов (контроль) %: мясо индейки 81,6; крахмал 3,0; соль поваренная 0,2; вода и отличались содержанием растительных и сливочного масел: подсолнечного и льняного (композиции 2); оливкового и льняного (композиция 3); соевого и льняного (композиция 4); кукурузного и льняного (композиция 5); сливочного и льняного (композиция 6) (табл. 1).

При составлении композиций использовали растительные масла первого отжима, выработанные на отечественных предприятиях (кроме оливкового - импортного производства), которые вводились в фарш индейки на стадии его перемешивания с другими компонентами рецептуры до получения однородной структуры.

Для изучения жирнокислотного состава использовали мясо самок индеек в возрасте 6 месяцев и мясо самок цыплят-бройлеров в возрасте 42 сут. Условия содержания и кормления птицы в соответствии с Методическими рекомендациями по откорму птицы (ВНИТИП).

Для исследования влияния тепловой обработки фарши формовали в виде фрикаделек и бланшировали в воде с температурой 95±2 °C до достижения температуры внутри продукта 70±1 °C.

Определение жирнокислотного состава проводили в обогащенных сырых и бланшированных композициях, контролем служил фарш из кускового мяса индейки.

Метод определения жирнокислотного состава

Экстракцию липидов из средней пробы, смешанной с безводным сернокислым натрием, проводили хлороформом. Получение метиловых эфиров жирных кислот: 40-50 мг экстрагированных липидов и 1-2 мг антиокислителя BHT помещали в пробирку с завинчивающейся крышкой, растворяли в 1 см3 гекса-на, добавляли 5 см3 раствора HCl в метаноле концентрацией 3 моль/дм3, плотно закрывали тефлоновой крышкой и выдерживали в термостате 80 мин при температуре 60 °C с периодическим перемешиванием. После охлаждения метанольный раствор смешивали

When developing formulations, virgin vegetable oils from national manufacturers (except imported olive oil) were used. Vegetable oils were introduced into the minced turkey meat at the stage of its mixing with the other recipe components until obtaining a homogenous structure.

To study the fatty acid composition, meat of female turkeys at the age of 6 months and meat of female broiler chickens at the age of 42 days was used. The conditions of poultry keeping and feeding corresponded to the Methodical Recommendations on Poultry Feeding (VNITIP).

To study an effect of thermal treatment, minced meat was formed in meat balls and blanched in water with a temperature of 95±2 °C until reaching a product core temperature of70±1 °C.

The fatty acid composition was determined in the enriched raw and blanched formulations; minced meat from turkey meat in pieces served as a control.

Method for determination of fatty acid composition:

Lipids from an average sample mixed with anhydrous sodium sulfate were extracted with chloroform.

Preparation of methyl esters of fatty acids: 40-50 mg of extracted lipids and 1-2 mg of antioxidant BHT were placed in a screw capped tube, 1 cm3 of hexane was dissolved, 5 cm3 of the HCl solution in methanol with a concentration of 3 mol/dm3 was added, a tube was closed firmly with a Teflon lid and held in a thermostat at a temperature of 60 °C for 80 min. with repetitive stirring. After cooling, the methanol solution was mixed approximately with 10 cm3 of the 10% aqueous solution of sodium chloride, the methyl esters were extracted with hexane (the total volume of hexane was 8-10 cm3) and the obtained hex-ane solution of methyl esters was analyzed by gas-liquid chromatography using the gas chromatograph Cristall-2000M with a flame ionization detector and the capillary column Supelco Omegawax 320 (length: 30 m, internal diameter: 0.32 mm, liquid phase thickness: 0.25 ^m). The conditions of chromatography: carrier gas - nitrogen; sample injection (1 mm3) with split ratio of 40 : 1; vaporizer

с примерно 10 см3 10%-ного водного раствора хлорида натрия, экстрагировали метиловые эфиры гексаном (общий объем гексана 8-10 см3) и полученный гекса-новый раствор метиловых эфиров анализировали методом газожидкостной хроматографии с использованием газового хроматографа Кристалл-2000М с пламенно-ионизационным детектором и капиллярной колонкой 8ире1со Omegawax 320 (длина 30 м, внутренний диаметр 0,32 мм, толщина жидкой фазы 0,25 мкм). Условия хроматографирования: газ-носитель азот; ввод пробы (1 мм3) с делением потока 1:40; температура испарителя 250 °С; температура термостата колонки 200 °С (анализ проб со сливочным маслом проводился в режиме программирования температуры колонки от 120 до 200 °С). Для каждого образца проводился анализ трех идентичных проб. Обработка результатов анализа: идентификация пиков на хрома-тограммах проводилась с помощью индексов удерживания Ковача, а также сравнением с хроматограммой стандартной смеси метиловых эфиров жирных кислот РиБЛ-2 (8ире1со) и с хроматограммами жиров и масел с хорошо известным жирнокислотным составом. Массовую долю индивидуальных жирных кислот рассчитывали относительно суммарного содержания всех жирных кислот как отношение площади пика метилового эфира жирной кислоты к сумме площадей всех пиков на хроматограмме с учетом поправочных

temperature - 250 °C; column thermostat temperature -200 °C (an analysis of the samples with butter was carried out in the regime of column temperature programming from 120 to 200 °C). For each sample, an analysis of three identical specimens was carried out.

Processing of the analysis results: identification of the peaks on the chromatograms was carried out using Kovats retention indices and by comparing with the standard mixture of methyl esters of fatty acids PUFA-2 (Supelco) and the chromatograms of fats and oils with well-known fatty acid compositions. The mass fraction of the individual fatty acids was calculated relative to the total content of all fatty acids as the ratio of the peak area of a fatty acid methyl ester to the sum of areas of all peaks on the chro-matogram taking into consideration the correction factors for the differences in the molecular masses of methyl esters and fatty acids (when processing the data for the samples with butter, the factors were also used for the detector response for fatty acids with the chain length of less than 12 carbon atoms).

For each sample, an analysis of three identical specimens was carried out and the mean values and confidence limits of random measurement errors (the value of confidence probability 0.95) were calculated according to ISO 2602:1980 'Statistical interpretation of test results -Estimation of the mean - Confidence interval'.

Результаты и их обсуждение

Жирнокислотный состав и содержание ПНЖК в мясе птицы и используемых растительных и сливочном маслах, а также фаршевых композициях представлены в табл. 2, 3, 4, 5.

Полученные нами данные по содержанию омега-3 и омега-6 жирных кислот в мясе птицы и растительных маслах свидетельствуют о высоком содержании омега-3 в льняном и соевом маслах по сравнению с другими видами сырья (табл. 4).

Установлено, что при использовании в составе мясных композиций с мясом цыплят-бройлеров в качестве жирового компонента 2,6% соевого масла соотношение омега-6 / омега-3 сдвигается в сторону оптимального, достигая значения 6 единиц. При используемых других видов растительных масел в сочетании с мясом птицы (цыплят-бройлеров и индейки) необходимо введение льняного масла [21, 22].

Известно, что ПНЖК в процессе тепловой обработки претерпевают изменения [23]. В связи с этим нами изучен жирнокислотный состав разработанных композиций и исследовано влияние тепловой обработки (бланширования) на его изменение. Контролем служил фарш из мяса индейки без введения льняного масла. Результаты исследований представлены в табл. 5, рис. 1.

Анализ жирнокислотной сбалансированности обогащенных фаршей до и после тепловой обработки свидетельствует, что во всех композициях отношение омега-6 : омега-3 несколько повышается (рис. 1). В обогащенных фаршах до тепловой обработки это отношение составило от 6,5 до 7,7 единиц, в то время как в контроле оно составляет 42 единицы.

Results and discussion

Fatty acid composition and PUFA content in poultry meat, used vegetable oils and butter, as well as the minced meat formulations are presented in Tables 2, 3, 4, 5.

The data obtained by us on the content of omega-3 and omega-6 fatty acids in poultry meat and vegetable oils indicate the high content of omega-3 in linseed and soya oils compared to other types of raw material (Table 4).

It was established that upon using 2.6% of soya oil as a fat component in the meat formulations containing chicken, the omega-6 / omega-3 ratio is shifted towards the optimal value achieving 6 units. When using other types of vegetable oils in combination with poultry meat (broiler chickens and turkey), it is necessary to incorporate linseed oil [21, 22].

It is well known that PUFAs undergo changes during thermal treatment [23]. In this connection, we studied the fatty acid composition of the developed formulations and an effect of thermal treatment (blanching) on its changes. Minced turkey meat without addition of linseed oil served as a control. The results of the investigations are presented in Table 5, Fig. 1.

An analysis of the fatty acid balance of the enriched minced meat before and after thermal treatment suggests that the omega 6:omega 3 ratio slightly increased in all formulations (Fig. 1). In the enriched minced meat before thermal treatment, this ratio was 6.5 to 7.7 units; while in the control it was 42 units. The omega 6:omega 3 ratio after thermal treatment was 6.5 to 8.0 units for minced meat formulations that included vegetable oils in combination with linseed oil. In the formulation with a combination of butter and linseed oil, this ratio increased significantly and was 9.2 units, which suggests significant changes in the fatty acid composition compared to the others. In the control, this ratio in minced turkey meat after thermal treatment was 44 units.

An analysis of the results of the conducted investigations showed that all formulations had the high content of PUFAs (Table 6). This corresponds to the indicators of the fatty acid balance, which were RL1.. .3=0.47 - 0.57 and RL1...6 = 0.32 - 0.37 units for the enriched minced meat before thermal treatment and 0.48 - 0.57 and 0.31 - 0.38 units after thermal treatment, respectively (Table 7).

Отношение омега-6 : омега-3 в фаршах после тепловой обработки составило от 6,5 до 8,0 единиц для композиций фаршей, включающих растительные масла в сочетании с льняным маслом. В композиции же, использующей сочетание сливочного с льняным маслом это отношение увеличилось значительно и составило 9,2 единицы, что свидетельствует о больших превращениях жирнокислотного состава этой композиции по сравнению с остальными. В контроле это отношение в фарше из мяса индейки после тепловой обработки составило 44 единицы.

Анализ результатов проведенных исследований показал, что все композиции имеют высокое содержание ПНЖК (табл. 6). Это согласуется со значениями показателей жирнокислотной сбалансированности, составляющими RL1...3=0,47 - 0,57 и RL1...6 = 0,32 -0,37 единиц для обогащенных фаршей до тепловой обработки и 0,48 - 0,57 и 0,31 - 0,38 единиц после тепловой обработки соответственно (табл. 7)

Как видно из данных, приведенных в табл. 7, после варки увеличивается доля НЖК, кроме композиции со сливочным маслом, в которой увеличивается доля МНЖК, и уменьшается во всех композициях доля ПНЖК. Однако эти изменения незначительны и составляют до 5,5% от исходного количества жирных кислот. Изменение же отношения омега-6 : омега-3 жирных кислот более существенно. Оно составляет от 0,1 единиц в композиции подсолнечное - льняное масла до 2,3 единицы в композиции сливочное - льняное масла, 1,4 и 33,8% соответственно. При этом степень изменения отношения омега-6: омега-3 жирных кислот не зависит от уровня введения льняного масла в рецептуру. Так, наименьшее изменение указанного отношения происходит в рецептуре с наибольшим введением льняного масла (0,80%), а наибольшее в

As can be seen from the data presented in Table 7, the SFAs proportion increased after cooking except the formulation with butter, in which the MUFA proportion increased; while the PUFA proportion decreased in all formulations. However, these changes were insignificant (up to 5.5% of the initial amount of fatty acids). The change in the omega-6 : omega-3 ratio was more significant. It was in a range from 0.1 units for the formulation with sunflower and linseed oils to 2.3 units in the formulation with butter and linseed oil (1.4 and 33.8%, respectively).With that, the degree of changes in the omega-6 : omega-3 ratio did not depend on the level of linseed oil addition to a formulation. For example, the minimal change in the above mentioned

Выводы

Изучен жирнокислотный состав и жирнокислот-ная сбалансированность липидной части разработанных рецептурных композиций из мяса индейки, включающих растительные масла (подсолнечное или кукурузное, или оливковое, или соевое) или сливочное масло, обогащенных льняным маслом.

Показано превышение в разработанных композициях содержания ПНЖК по сравнению с эталоном

Полученные экспериментальные данные по обогащению жирнокислотного состава фаршей с целью обеспечения сбалансированного соотношения омега-6:омега-3 жирных кислот и уровень изменения этого отношения подтвердили возможность обогащения продуктов из мяса птицы льняным маслом для достижения нутриентно-адекватного соотношения омега-6:омега-3 жирных кислот.

Определено, что разработанные композиции обеспечивают нутриентно-адекватный баланс омега-6:омега-3 жирных кислот, не превышающий 10 единиц.

При использованном способе и режиме тепловой обработки (бланширование в воде с температурой 95±2 °С до достижения температуры внутри продукта 70±1 °С) содержание транс-изомеров жирных кислот в фрикадельках не меняется в пределах погрешности измерений.

Исследованы изменения содержания НЖК, МНЖК, ПНЖК и отношения омега-6 : омега-3 жирных кислот в разработанных обогащенных омега-3 композициях при тепловом нагреве. Установлено, что эти изменения не зависят от уровня введения льняного масла, а обусловлены жирнокислотным составом входящих в композицию масел.

Тепловая обработка оказывает незначительное влияние на жирнокислотную сбалансированность продукта, подвергнутого тепловой обработке.

ratio occurred in the formulation with the highest level of linseed oil addition (0.80%), and the maximum change was in the formulations with the average level of addition (0.40% and 0.46%). Apparently, these changes are more related with the species specific content of fatty acids.

The level of changes in SFAs, MUFAs and PUFAs after blanching is presented in Table 7.

Conclusion

The authors have studied the fatty acid composition and fatty acid balance of the lipid fraction of the developed formulations from turkey meat with vegetable oils (sunflower, corn, olive or soya) or butter enriched with linseed oil.

An increase in the PUFA content in the developed formulations compared to the reference was shown.

The obtained experimental data on the enrichment of the fatty acid composition of minced meat with the aim of ensuring the balanced omega-6 : omega-3 ratio and on the level of changes in this ratio confirm the possibility to enrich food products from poultry meat with linseed oil in order to achieve the nutritionally adequate omega-6 : omega-3 ratio.

It was found that the developed formulations ensured the nutritionally adequate balance of omega-6:omega-3 fatty acids, which did not exceed 10 units.

Under the used method and regime of thermal treatment (blanching in water with a temperature of 95±2 °C until achieving a product core temperature of 70±1 °C), the content of the trans-isomers of fatty acids in the meat balls did not change within the range of measurement errors.

The changes in SFAs, MUFAs, PUFAs and the omega 6:omega 3 ratio in the developed formulations enriched with omega 3 upon thermal heating were studied. It was established that these changes did not depend on the level of linseed oil addition, but were conditioned by the fatty acid composition of oils being constituents of the formulations.

Thermal treatment had an insignificant effect on fatty acid balance of a product subjected to thermal treatment.
