The drink, which today occupies the first place in the world in popularity among vegetable juices, was invented quite by accident. At the beginning of the last century, an American hotelier decided to serve tomato juice for breakfast instead of the standard orange juice. The guests liked the original drink, and already in the 20s of the 20th century, mass production of tomato juice began in America.

A tasty and nutritious bright red drink is presented in a large assortment on the shelves of modern supermarkets. It is used in cooking as an additional ingredient for preparing a variety of sauces and dishes, or simply served at the table as an independent drink. According to nutritionists, homemade tomato juice is the most beneficial for health.

Composition and calories

Tomato juice contains a lot of water (93.6%) and a minimum of calories - 23 kcal. Considering that it contains practically no fats (0.29%), proteins (0.86%) and very few carbohydrates (4.32%), but fiber is present (0.4 g per 100 g of product) [ 1 ] and many healthy vitamins and microelements - the drink is an ideal addition to the menu during fasting days.

Below is just a small list of useful substances contained in the juice of fresh tomatoes:

• Potassium (198 mg). The mineral plays an important role in the regulation of muscle contractions (helps to get rid of convulsions), improves the supply of oxygen to the brain -promotes mental clarity, stabilizes blood pressure [2] , reduces the manifestation of allergic reactions.

• Phosphorus (19 mg). Participates in protein synthesis, the process of strengthening and mineralization of bones (reduces the risk of developing osteoporosis, rickets, fractures [3] ), improves metabolism, reduces painful manifestations in arthritis.

• Magnesium (10 mg). It affects the strength of blood vessels, stabilizes blood pressure and

blood sugar levels, takes part in tissue regeneration processes, reduces pain in joints and

muscles, helps to cope with nervous disorders, depression, stress, insomnia, [4], migraine attacks . [5]

• Vitamin C (49.8 mg). The water-soluble antioxidant is responsible for metabolism and cleanses toxins, improves the production of the body's own collagen (the skin becomes more elastic and toned), strengthens the immune system [6] and protects against viruses and colds, and is successfully used in the treatment of COVID-19. [7]

• Vitamin K, or phylloquinone (2.3 mcg). Accelerates blood coagulation and reduces the risk of large blood loss in injuries [8] , improves calcium absorption - prevents the formation of osteoporosis [9] , regulates blood glucose levels - is used as a prevention of diabetes mellitus.

• Beta-carotene (270 mcg). Yellow-orange plant pigment is responsible for eye health — reduces the risk of vision loss and cataract development, improves tissue healing and repair processes — protects them from ultraviolet radiation, has antitumor properties [10] — is effective in preventing oncology, increases concentration — has a positive effect on brain function and cognitive function, shows good results in the fight against autism spectrum disorders (ASD).

Tomatoes are also sources of the unique antioxidant lycopene - 100 grams of natural 100% tomato juice contains 9050 micrograms of an orange-red pigment. The carotenoid, which colors vegetables and fruits red, inhibits the oxidative processes of cells - prevents premature aging of the body, has a positive effect on eye health (helps to avoid clouding of the lens and the development of cataracts) and the cardiovascular system - protects against atherosclerosis. It is better to include a drink in the children's menu after the baby reaches 1 year (if we are talking about a self-prepared product). Store-bought juices are not recommended for babies under 3 years old.

How to make juice from tomatoes

For juicing, it is better to use vegetables grown on your own or purchased on the market to be absolutely sure that they do not contain nitrates and other chemicals. Choose firm, but not too hard, whole fruits, without dents or cracks (bacteria can accumulate in them).

You can squeeze the juice using a juicer, blender or meat grinder. In the latter case, to obtain a more liquid consistency of the drink, the puree can be additionally rubbed through a sieve, other fruit or vegetable fresh juices (celery, cucumber, parsley stalks, etc.) can be added for a change in taste. Juice can be consumed immediately or preserved for the winter, after boiling and pouring in sterilized jars.
