Pomegranate juice is a rich source of beneficial ingredients; the demand for its consumption is growing all over the world. Production of pomegranate juice on an industrial scale involves fruit pressing. The purpose of this study was to study the quality characteristics, value level of pomegranate juice produced. Pomegranate fruits are harvested by hand and mechanically processed to extract juice, which is processed using a throwing machine, a peristaltic pump, and a pneumatic press. Chemical analytical determination was performed on various juice samples. The analysis of trademark and organoleptic quality indicators of the pomegranate juice taken for the sample was carried out.

АНАЛИЗ ХАРАКТЕРИСТИК И ПОКАЗАТЕЛЕЙ КАЧЕСТВА ГРАНАТНОГО СОКА

Гранатовый сок богатый источник полезных ингредиентов; спрос на его потребление растет во всем мире. Производство гранатового сока в промышленных масштабах связано с прессованием фруктов. Целью данного исследования было изучение качественных характеристик и уровня ценности производимого гранатового сока. Плоды граната собирают вручную и механически обрабатывают для получения сока, который обрабатывается с помощью метательной машины, перистальтического насоса и пневматического пресса. Химико-аналитическое определение проводилось на различных образцах сока. Проведен анализ товарных и органолептических показателей качества отобранного на пробу гранатового сока

Аннотация: Гранатовый сок - богатый источник полезных ингредиентов; спрос на его потребление растет во всем мире. Производство гранатового сока в промышленных масштабах связано с прессованием фруктов. pomegranate juice has antipyretic and antiseptic properties. Regular use helps to strengthen the cardiovascular system. It is important to choose the right manufacturer to be sure of the benefits of pomegranate juice.

REFERENCES AND METHODS The methods of logic, analysis, synthesis, coherence and objectivity of scientific knowledge were widely used in the research process. In this article, opinions on the characteristics of pomegranate juice and the characteristics of quality indicators were analyzed. A.J. Choriyev's book "Technology of canning and storage of agricultural products" is a methodological resource.

Analysis of organoleptic indicators of pomegranate juice quality

Pomegranate juice must be prepared in accordance with the requirements of this standard in accordance with sanitary norms and rules, recipes and duly approved technological instructions. CONCLUSION

Evaluation of marking data of pomegranate juice "Dena" GOST R 51074-2003 «Food products. Consumer information. "No deviations were found on the basis of this standard. Thus, the manufacturer takes care of the products purchased by customers, all the necessary positions GOST R 51074-2003" Food products.
