THE IMPORTANCE OF THE RESTAURANT NETWORK IN HOTELS

ABSTRACT

This article provides information on the structure of restaurants in Uzbekistan and the problems in the industry and suggestions for their solution.

INTRODUCTION

Tourism is a strategic sector of the economy, plays an important role in the development of the country. Therefore, the implementation of international norms and standards aimed at creating favorable conditions for tourism development, development of tourism infrastructure, creating a favorable tourism environment, development of transport logistics, expansion of domestic and foreign routes, improving the quality of transport services, January 5 , 2019 to diversify tourism products and services, promote tourism products of the Republic of Uzbekistan in international and domestic tourism markets, strengthen the image of the country as safe for travel and leisure, as well as training for the tourism industry. The Concept for the Development of Tourism in the Republic of Uzbekistan for 2019-2025, as well as a new version of the Law "On Tourism" was adopted on July 18, 2019. In the developed countries of the world, the hotel restaurant is a special service in the structure of hotel services, which contributes to the industry in equal amounts with the tourist resources to attract tourists to the world. [1]

METHODOLOGY

The restaurant is a catering establishment that sells a wide range of dishes, both simple and complex. Its services include custom and corporate meals, wine and alcohol, tobacco and confectionery. High quality service for customers to have a good rest. Restaurants will be located on busy streets, railway, bus stations, airports, berths, ships, as well as places of interest, historical and memorial monuments.

Restaurant waiters serving foreign tourists must know a foreign language and be able to communicate with the guest. The luxury restaurant can also accept orders for meals not listed in the menu. The showcases of luxury and high-class restaurants are decorated with various landscape art materials, electric lighting, photographs.

It will be easier to decorate shop windows in the first category restaurants. In order to create convenience for the customer in the restaurant halls, it is necessary to choose the right furniture and other accessories. [2]

DISCUSSION

The main furniture in the restaurants is as follows:

> Double tables

> Tables for 4 people

> Tables for 8 people

> Rectangular tables

> Round tables

> In addition, in restaurants

> Upholstered chair

> Sofa

> Special sideboard for waiters

> Vase for flower

> There will be a service table and additional equipment.

Kitchen utensils and appliances for luxury restaurants are made to order. The dishes are selected taking into account the features of the service. Every piece of porcelain must bear the trademark of its manufacturer. [4]

Towels, tablecloths, napkins, hand towels made of fabric used in kitchens are made depending on the nature and color of the hall, each of which must have a restaurant logo. The table cloth on the table is freshly written with delicate taste for each guest.

The first category of restaurants uses dishes made of metal and filled with gold. Tablecloths and napkins, hand towels can be made of white and colored fabrics. Luxury restaurants, of course, require additional service.

Luxury and high-end restaurant menu must be printed in color as an album. While these restaurants serve tourists, the menu is printed in 3 languages: English, French and German. Luxury and high-end restaurants should have space for a special ballroom dance for orchestral performances.

Restaurants differ from each other in the following ways:

> Assortment of prepared dishes (vegetables, fish, national, foreign dishes);

> Location (city, train station, hotels);

City restaurants will be located within the city. It only works during certain hours. They offer a wide range of dishes, snacks, drinks. Mainly for lunch and dinner and special nights.

Station restaurants are located at railway and airport stations and serve passengers 24 hours a day. These restaurants will include food, snacks and drinks. The ship's restaurant is designed to serve tourists and passengers. These restaurants sell food, confectionery, drinks, and travel equipment. Passengers are served by waiters. Large passenger ships have one or more salons and restaurants, buffets, bars, equipped kitchens.

RESULT

There will be 48 to 150 seats in the salons and restaurants. They must be equipped with the following furniture: a table and a sideboard will be firmly fixed to the floor.

Wagon restaurants are on long-distance trains. Typically, such restaurants serve passengers traveling more than one night.

The restaurant for car tourists will be located at major intersections and major bus

stations. In such places you can eat and relax. [3]

The hotel chain of the hotel complex includes 2 restaurants:

- a delicious company meal,

- small restaurants with low prices for food and beverages.

The amount of food and beverages in the menu of out-of-town, national and thematic restaurants is formed on an individual basis on the basis of the assortment of original food and products. The original dish is made according to a special recipe. A dish made in a factory according to a special recipe is called an original dish. [4]

RESTORAN

Beaches have been the main attraction of this part of the tourism industry, but despite the expansion of opportunities in this area, regional restaurants are lagging behind compared to the capital's restaurants. A number of shortcomings are obvious, such as restaurant buildings, service status, hygienic condition, mainly catering, restaurant interior design, bar, staff skills. Due to these shortcomings, the gastronomic tourism sector is also affected to some extent.

CONCLUSION

These shortcomings need to be addressed as soon as possible in hotels, both in-house and out-of-hotel. The implementation of special tactical tasks in the promotion of the potential of gastronomic tourism in our country should be carried out with a view to the future.

They are as follows:

1. Special attention should be paid to the location of restaurants in natural areas and in the city center;

2. Restaurants should be designed before exterior and interior design is built;

3. the restaurant logo should be created;

4. Training courses for waiters should be introduced;

5. pay special attention to the equipment of the building;

6. Allocation of a certain amount of subsidies and tax deductions by the state for restaurant projects that meet international standards;

7. Inclusion of national dishes in the restaurant menu;

If these proposals are studied and implemented in hotels and restaurants, it will be one of the important steps for the future of tourism and will not only ensure the attractiveness of tourism, but also increase the number of tourists.
