An outlandish fruit, similar to a large pine cone, was brought to Europe by Christopher Columbus and almost immediately caused a stir among the medieval nobility. Pineapples began to be grown in Holland, England, France, and other European countries, building luxurious greenhouses for their cultivation. Today, a tasty and healthy fruit is no less popular. In particular, pineapple juice is widely used in cooking, cosmetology, and traditional medicine. This is due to the fact that a delicious refreshing fresh juice not only quenches thirst, but is also a rich source of many vitamins and nutrients.

Composition and calories

Pineapple pulp is quite watery (86.4% water), contains a small amount of carbohydrates (12.9%), a minimum of proteins and fats (0.36 and 0.12 grams per 100 grams of product), which explains the rather low calorie content of pineapple fresh - 53 kcal. [1] That is why this delicious drink is recommended to be included in various diet menus. In addition, the fruit contains more than 30 biologically active compounds [2] . In particular, it contains:

• Potassium (130 mg). The mineral-electrolyte ensures the proper functioning of body cells, regulates the acid-base balance and heart rate, prevents the development of muscle weakness and the development of hypertension [3] , participates in the supply of oxygen to brain cells and improves thought processes.

• Magnesium (12 mg). Reduces joint pain, improves heart rate, normalizes the amount of sugar in the blood, dilates blood vessels and lowers blood pressure [4] , helps fight stress, depression and neuroses [5] , prevents the development of Alzheimer's disease and the occurrence of strokes [6] , improves calcium absorption and participates in the strengthening of bone tissue.

• Calcium (13 mg). The trace element plays an important role in the health of teeth and bones, especially since with age it begins to be gradually washed out of the body, which can lead to the development of osteoporosis. Calcium also helps to avoid muscle spasms and even oncology [7] .

• Vitamin C (43.8 mg). Like any other fresh juice, freshly squeezed pineapple juice cannot be kept indoors at room temperature for a long time. Contact with air leads to the oxidation of the drink, the loss of most of its beneficial properties, as well as sourness due to the growth of pathogenic bacteria in it. You can store juice without risk to its quality in the refrigerator (no more than a few days). For longer storage, pasteurization is recommended at a temperature of 70-95 degrees Celsius for up to 5 minutes (longer and more intensive processing of the product negatively affects its taste, aromatic and phytochemical properties [25] ).

But it should be borne in mind that freshly squeezed raw pineapple fresh is still considered the most beneficial for health. [26] It contains the largest amount of valuable enzymes, which, under the influence of temperature (pasteurization), disappear from the product. At the same time, as experts' studies show, most of the useful substances are preserved in a frozen drink, which makes it possible to recommend this particular technique for long-term storage of juice.
