The plant, rich in essential oils and unique trace elements, is widely used in modern folk medicine. Healing decoctions are prepared from it and fresh juice is squeezed out. Finding parsley juice on the shelves of modern supermarkets is quite a challenge, but it can be easily prepared on your own.

Composition and calories

Parsley contains only 36 kcal, a minimum of fat (0.79%), a small amount of protein (2.97 g per 100 grams of product) and carbohydrates (6.33%) [1] , which is complemented by an impressive concentration of various vitamins, amino acids, micro and macro elements - the perfect drink for diet

and fasting days! Here is just a small list of useful active ingredients contained in freshly squeezed parsley juice:

• Potassium (554 mg). Regulates the work of the heart [2] and supports the health of blood vessels - stabilizes blood pressure [3] , helps improve metabolism [4] and get rid of seizures.

Also note that due to the fact that parsley juice contains high concentrations of components, it has a fairly high biological activity. Therefore, it is recommended to use it in small dosages - no more than a quarter cup (50 ml) per day. It is better to break the portion into several doses and further dilute the concentrated drink with water or other liquids. For example, a rich bright green vitamin fresh juice goes well with various vegetable juices: celery, tomato, carrot, etc.

How to prepare and store parsley juice

It is easy to prepare a healthy fresh juice (you can use both the greens themselves and parsley roots). The plant must be cleaned of sluggish and damaged leaves, thoroughly rinsed in running water, and then additionally left in a cool liquid for half an hour to cleanse it of microorganisms.

You can squeeze the juice using a juicer (preferably a screw one) or a blender. In the latter case, the resulting puree can be squeezed through a sieve and gauze, or simply diluted with water.

Parsley juice is recommended to be consumed immediately after pressing, before it has had time to oxidize from contact with oxygen. It is not preserved, because during the heat treatment it loses most of the nutrients. For long-term storage of the product, it is recommended to freeze it by pouring it into zip bags.
