Abstract. Celery juice is a valuable source of many useful microelements and amino acids that should definitely appear in your family diet. After all, with its help you can not only fully saturate the body with the necessary vitamins and dramatically transform the figure, but also to prevent the development of many diseases, from depression to diabetes and dementia.

Celery has been known to mankind since antiquity. The mention of a vegetable with elegant finely cut foliage and an original tart-spicy aroma can be found in the poem "Iliad" by Homer and in the writings of the "father of medicine" Hippocrates. The latter recommended using the plant as an effective remedy for calming the nerves. The vegetable is no less popular today. It is widely used in cooking, it is used to prepare a healthy fresh juice. Many Hollywood stars include freshly squeezed celery juice in diet menus, claiming that this miraculous drink is the true reason for their unfading youth, harmony and beauty. Anyone can be convinced of the benefits and effectiveness of bright green fresh juice by preparing it on their own in their own kitchen.

Composition and calories

Celery belongs to the category of low-calorie vegetables. 100 grams of fresh product contains only 14 kcal [1] . Surprisingly, the fact is that the body spends several times more calories on digesting celery fresh than it receives! In addition, there are practically no fats (0.17%) and proteins (0.69%) in such a drink, very few carbohydrates (2.97%), so juice is an excellent addition to the menu on fasting and diet days.

In addition to being low-calorie, celery juice is valued by healthy lifestyle enthusiasts for its rich composition of useful trace elements. In particular, it contains:

• Potassium (260 mg). Reduces the intensity of allergic reactions - eliminates dryness and irritation of the skin [2] , plays an important role in regulating heart rate - helps lower blood pressure and avoid the risk of developing cardiovascular diseases [3] , supports kidney health and prevents the formation of kidney stones. [4]

• Phosphorus (24 mg). It contributes to the normal functioning of the brain - improves cognitive functions, strengthens bone tissue - prevents the risk of developing osteoporosis and rickets [5] , eliminates problems with growth and developmental delay, normalizes appetite and weight, improves metabolism, helps get rid of the constant feeling of fatigue.

• Zinc (0.13 mg). Stimulates the production of the body's own collagen, prolongs youthfulness of the skin, accelerates wound healing [6] , improves digestion, helps in muscle recovery, improves immunity [7] - helps fight viruses and bacteria.

• Manganese (0.103 mg). It enhances the action of insulin and normalizes the level of cholesterol in the blood [8] , softens the action of toxins, helps the body cope with poisoning, takes part in the synthesis of neurotransmitters - improves the functioning of the nervous system, promotes accelerated recovery of the skin and healing of wounds.

Also in the leaves and root of the vegetable there are various vitamins:

• Vitamin C, or ascorbic acid (3.1 mg). A water-soluble antioxidant that prevents the development of oncological diseases [9] , protects against scurvy [10] , prevents the development of periodontitis [11] , and strengthens the body's immunity.

• B group vitamins: thiamine (0.021 mg), riboflavin (0.057 mg), niacin (0.32 mg), pantothenic acid (0.246 mg), etc. Positively affect the nervous and cardiovascular systems [12], brain activity [ 13 ] , improve mood and help get rid of stress [14] , normalize metabolism, promote full energy production, heal the epidermis.

• Vitamin E (alpha-tocopherol) (0.27 mg). Powerful antioxidant [15] - protects cells from damage by free radicals, prolongs the youth of the body, improves metabolic processes, prevents the threat of miscarriage [16] , helps fight skin diseases: psoriasis, dermatosis, vitiligo [17] , etc.

Contraindications and features of the use of celery juice

Despite the huge health benefits, celery juice has some contraindications. In particular, for some people, the product can be an allergen and even cause anaphylactic shock. [29] Also, in rare cases, celery can cause contact dermatitis. [30] Therefore, for the first time you should try a vegetable or fresh from it with caution in minimal doses. If after acquaintance with the drink the body does not show negative reactions, the portion can be increased to 100-200 ml. This is the optimal daily allowance for an adult. It is not recommended to exceed it.

Note! Drinking an excessive amount of celery juice can oversaturate the body with the substances it contains, which will negatively affect your well-being - it will manifest itself as allergic reactions and even symptoms of hyperthyroidism. [31]

It is not recommended to consume an excessive amount of celery and the juice obtained from it for expectant mothers. As studies show, such an excessive love for a vegetable can provoke the risk of developing food allergies in babies in the future. [32]

Celery lovers should also be careful about sunbathing. This warning is due to the fact that the vegetable contains psolaren. The substance accumulates in the skin and makes it more sensitive to sunlight - it can cause the development of photodermatitis. [33] Therefore, it is recommended to plan a long course of health juice therapy for the winter or autumn-spring seasons, when the sun is not too active, or use creams with SPF protection.

It is recommended to drink celery juice on an empty stomach, half an hour before meals, preferably immediately after preparation, until it has had time to oxidize from contact with air and lose some of its nutrients. For long-term storage, fresh is recommended to be frozen - a frozen drink can be in the freezer without the risk of losing its benefits for 3-4 months.

How to make celery juice

To prepare a healthy drink, both the stems and roots of the vegetable are used. They are well washed, cleaned of existing damage and passed through a juicer or blender. To soften and diversify the taste of smoothies, you can add other vegetables and fruits: apple, carrot, beetroot, cabbage, lemon, etc.
